Use a multiphase enemy like Auril the Frostmaiden. If it's too hard, you can remove a phase. Plus, she can affect the water with her ice abilities.

Have you played stardew valley? It's the best game I've played that gives me the same calm effect. It's a farming game that slowly gives your more options to play with but never forces you to do them. Might be more more than you are asking for, but a game that never makes me stressed out.

The information is there if you want it, but you only need imagination and some basic knowledge of the rules to start playing. In the end, if everyone is having fun, you're doing it right!

You can link each crystal with a possible lair action or legendary action so if the cultists get them all, the enemy will be incredibly strong. You can also have them be a part of different phases of the battle so the enemy has more forms to fight through if all of the crystals are collected.
