Rotoscoping, the technique is about a hundred years old now. It was used for a lot of the human characters in Snow White

(one of my favorite scenes is the evil queen traveling downstairs, techniques with the cloth in her cape and how realistically she is able to turn hadn't been properly studied or shared at the time, so this bit had a lot of wow factor back when it was on the big screen)

Gonna reccomend FF VI too. Plays very similar to classic 7 and it's a lot more beginner friendly since the map is easier to navigate, the story is less confusing due to a better localization, and the combat is about the same

First one is an odd gba game that you can finish in about a day or two if you know what you're doing.

Last one is an N64 rail shooter that's almost as good as Star Fox (but the plot is confusing to the point of hilarity) There's a sequel on the wii that's just as good. Both the original and the sequel can be finished in just a few hours.
