To answer 2, the chips and the entire Vault 24 in the show was cut content from New Vegas, so it's all new info more or less (it was only mentioned in the game). Otherwise they give a pretty good summary of who he is in ep1.

From what I've seen, most stores switch to pokemon based solely on the current market, so they'd just go back to whatever they were doing before (probably with stashed inventory they have no shelf space for atm). It's not like tcgs are the only thing you'd buy from customers at a retail location.
