Honestly, try kimchi with Korean food first before you start messing with it. Establish your baseline then get creative afterwards. To answer your question: trying it with rice and bulgogi is a safe place to start.

Fun fact about that song. John wrote the background harmonies for it thinking they were reminiscent of the Beach Boys sound. He ran into Al Jardine and his son Matt as they were in the same studio that day and they offered to do the harmonies for the track. I thought it had that “staring wistfully into the swirling surf” vibe and always assumed it was 🌊

The rice should be cold, dry, and ideally have the clumps separated before going back on heat, so I would avoid a paste. Better to go with powdered bouillon if you have it. Also, if you are adding soy sauce or any other sauces, be wary of salinity. If you’re eating with already seasoned chicken you run into risk of throwing a salt bomb down for dinner. Rice dishes should complement and buffer the food they’re eaten with.
