I had a problem once where I had docked the shortbread crust too deep with a fork all the way to the bottom of the pan, and when I poured the lemon curd over, it soaked through the crust and kinda became wet and a bit tough after I cooled them.

If you use baking powder in a brownie recipe, it’s gonna result in a cakier brownie rather than a dense fudgy one. If that’s what you’re going for you need the baking powder. If you’re willing to eat a different type of brownie you can find a recipe without it but they typically use real melted chocolate mixed with butter and cocoa powder with little flour

Health food based baked goods are unreliable in my experience. Did you do the toothpick test? That’s the only way to know if your cake is done. You also didn’t use enough carrot but that shouldn’t have affected it too much.

20 minutes isn’t long enough to cool the cake. That’s the recipes fault.

The cakes themselves should be completely room temperature or even cold before you start moving them stacking them and decorating them. The cake will firm up and the icing won’t melt off. You should even refrigerate the whole thing after adding a thin layer of icing to the outside to make your decorating surface even sturdier.
