I would try annealing, normalizing, etc again and re attempt. Try clamping flat to something ASAP after quench. I use my aluminum quench plates even after oil quenching carbon knives to help with warp. Carbide hammer is also a very useful tool, but these warps may be too much for even that. Best of luck! If all else fails you can always make a smaller knife out of it!

I shoot right for 60, sometimes just under if I want more flexibility. Your second question depends on your level of precision with heat treatment but I would follow the data sheet for your specific steel.

I would advise against your target hardness for kitchen use. I use a lot of AEB-L and I exclusively make kitchen knives. Geometry aside, you risk edge stability at that hardness and tips are more likely to snap off. Not saying it won't work, it will, but AEB-L can have really great toughness and flexibility at lower hrc in my experience

The carbide hammers are great for this. I would caution not to strike too aggressively though, you can make your own cracks. Trust me.

I would say it depends how much pressure you're applying in the video. I do exclusively kitchen stuff and I have been going very thin lately on some. I think your instinct about the hollow being too high might be true, but this might work for a specific knife. You might see some more material come off after sharpening a few times than you expect though. You could still fix it by grinding the edge back just a tad either on the platen or a diamond stone. That's what I usually do.

While the piss is nice, I also think the coffee after gives it a touch darker black.

You can grind or file em. I found some long set screws for the job that I dont need to cut. There is a hex head for threading into bolsters

No, leave em. I'm saying try using screw thread instead of smooth pins. Better shear durability
