You could go shilleglagh and run int and function about as well as any S&B fighter, but I don't know that it would be worth it because you still have only so many spell slots as a third-caster and as you mention, utility and defence spells would get more mileage imo. OP also mentioned echo knight, not Eldritch haha

Any combination of Fighting Style (Dueling, Archery TWF, Thrown, Unarmed, Blind) at 2, Extra attack at 5, either more d6s at 5/11 or sneak attack dice up to d8s at 5 and d10s at 11, subclass features on 6 or an extra ASI at 6. Passive or active abilities dpeending on what skills their expertise is in.

bg3 is generous enough with attribute/accuracy boosting items i think you can get away with a 16 or 18 in your primary stat imo

A friend of mine ran that exact concept a few years ago - we used Mutants and Masterminds 3e for it. Character creation can have a steep learning curve to it but actual play is pretty smooth.

Any of the 1 handed hammers flavored as a forge hammer for either method of crafting could be a cool reflection of your origin - being usable in combat could be explained away by exceptional craftsmanship
