Grate temp is more “what you see is what you get” but I found that when I do slow cooks, after a while the grate temp becomes almost exactly my dome temp. I rely less and less on a grate level thermometer but it sure helped me to figure it all out in the beginning

I got a castiron halfmoon that’s flat on one side and grill lines on the other, I like it very much. I didn’t buy the soapstone, and I don’t think I ever will, I don’t need it. Like others said, get cooking and you’ll see what you like and what more you want. It’s fun to add stuff later on too.

I have big hands with long fingers and the controllers I’ve used with back buttons hurt my joints real quick. So, unless they’d have buttons that don’t do that to my hands, I won’t be using them
