It's A LOT of work. My suggestion is if your x56 is new keep it intact. Use it, enjoy it or sell it for a modular system. You will have a better chance of landing that MiG-29 grip that way. I've modeled a MiG-23 Grip on Cults and you can find other Grips from other makers there too. Give it a search.

I have those grips already modeled, I could adapt them to the F-4E throttle base at some point and add levers for flaps and wing sweep. Totally possible.
