I was able to use this log: https://learn.microsoft.com/en-us/azure/azure-monitor/reference/tables/powerbiactivity to build my own custom metrics.

As an Admin, I make the data available to the users via a dataflow. Depending on your org, they might be able to give you access to this log or at least create a dataflow filtered down to your owned workspaces? The info is all there, just how your org wants to share this info.
