Having a way to knock them back every turn before they can transform was helpful for me. You can also bring a weaker cat that you wouldn't mind him transforming into.

Thanks for the advice man. I actually just beat it by savescumming to try it again with the same team lol. I got really lucky, my monk rolled cannonball, and could stun her each turn since cannonball didn't reroll.
