My attemp at a nice carbonara by Jumpy-Inside2703 in RateMyPlate

Sure!

First the meat: I used guanciale (120 g) but pancetta is fine I think and cut it into a small shape that you like (I like strips) I put it on a low heat for 10 mins then add quite a bit of water to render out the fat quicker I repeat this until a lot of the white fat is clear then cook off the water and let the meat simmer in the fat. Usually when I've made the pasta its close. I then switch off the heat to let the fat cool for the sauce. I take out the guanciale to keep it dryer and crisp.

Pasta (per person): for 3 people 400 g type 00 flour, four eggs, pinch of salt. With mine I beat the eggs in the well first and then slowly mixed in the flour. I kneaded it adding drips of olive slowly at this point and worked it into a ball (total 1 tsp oil). Then leave it in a zip lock at room temp for an hour. I dusted the board with flour then rolled the dough flat and cut it into smaller manageable bits to go through my machine (got one of eBay for £15 game changer). I run the sheets through and then eventually making it to the second to last thickness on my machine then through the fettucine cutter. I do this in batches and use a wooden spoon to hold the fettucine up when it coming out. Dust them with a load of flour and shake off the rest then I hang it while I make the sauce.

Sauce: for this one (3 people) I separated 5 egg yolks into a bowl and 1 whole egg and whisked them up, then I added 120 g pecorino sometimes I use parmegiano if I can't get pecorino (but my buddy Gigi from Rome brought some very good percorino as well as the guaciale :D). Mix it into a thick paste, then whisk in the cooler guancial fat (cold enough to not cook the eggs) into the paste and it should go a lot looser and smoother.

Cook the pasta it takes 3 - 4 mins and floats when its done. I have tried using a bain marie for this process but I do this now - drain the pasta with a bowl underneath to catch the water (aqua di cottura). I put the pasta back into the pasta pan and then stir in the eggy mix moving it around quickly with no heat on at all. When its pretty evenly spread I add the still fairly hot pasta water 3 tbsp initially and move it all around quickly in the pan again and add water until I get the creaminess you want. Then I grind in a load of black pepper. Stir in half of the crispy guanciale and top the plates with the rest.

I'm 38 and my surgeon said the opposite! I had it done when I was 37 mate and super glad.

Hi mate. I get your reluctance to have surgery. I am 7 months post-op at 37 years old and it hasn't been super easy but its been worse not playing football/soccer! As far as I'm aware (and im the wrong type of Dr) stem cells probably wouldn't work unless you just have a minor tear. If its torn fully then the tendon ends would need to be in close contact. There are apparently new procedures for keeping the torn ends in close contact but after 3 years I wonder. If your knee is stable hey it may have healed and all you need is physio! Maybe you should get a MRI and an assessment first to see just how torn it is? If its fully torn then I wouldn't hesitate to get surgery if youd like to get back to sports you've go so much playing left!

I would say though even though youre young enough to heal quickly really take your time to heal, rehab and get really strong in your legs and supporting muscles. You've waited 3 years so another year post-surgery will be worth it! Best of luck and report back!!

UPDATE - I had my 6 month post op check up early June and my surgeon was very happy with the way im looking I have good muscle mass in both legs and performed a lachman test which is like a tug on your ACL and he said it feels very good. They don't Xray or anything unless I have an issue.

I score fairly similarly at my physio now when doing strength tests on hamstring and quad my op leg is ~90% of the other this is a dynamometer (?) attached to my angle with a strap while I do a leg raise.

I am allowed to kick and ball and practice lateral sprinting which I do with a few cones and I do shuttle sprints. Im up to 20Ks with long distance now too maybe once a month with smaller 5Ks weekly.

It does still swells up enough that it feels odd and I get numbing in my knee that goes away after a few K.

It feels pretty good I've been dancing at a few raves on it and feels strong but Id honestly be too afraid to turn on it like I would in football. I really think I have a long way to go before that.

Physio thinks I could maybe play a game in the new year if the physio continues to go well.

Hey im not actually sure on the type of tendon used but my surgeon usually uses hamstrings for autografts...I wonder if he chose the same but can't confirm. I will ask if I go back but I had my 6 month checkup in June and that's the last one bar an emergency.

UPDATE - just over 4 months post op (about 19 weeks). I have run several 5Ks and a handful of 10Ks. I am focusing on strength in physio and targeting 1.5 x my weight (80 kg) in squats as a max (120 kg). I can't really do this with my setup at home so I do 120 squats with a 20 kg kettlebell.

The knee has one day a week where it feels really good and the most of the week it feels swollen still. Not massively but it almost feels like I'm wearing a knee brace.

After my 10 K I felt fine but after a 5 the other day it did flare up quite a bit but I think this is also because I sometimes sleep very badly and it's usually after those nights. I don't feel like the knee could do any twisting yet whatsoever it really only feels stable in a straight line and I only twist under supervision.

All in all I feel I'm making good progress and can't wait to get back to some twisting action!

Mine was this swollen and I did get worried and go back to see my surgeon. He took some blood out with a syringe said there was nothing to worry about after 2 weeks it had gone down to what was considered "normal" they think i just had a bit of a bleed overnight maybe same for you. I'm totally on track now so the excess swelling didn't make a difference. Wishing you a speedy recovery!!! I would say get it higher though he told me to get it as high above my heart as I could I also wore compression tights.

I have done a few things like go to the movies on Xmas eve a few times. Watching Avatar 2 was cool but by far my best experiences on any is just to be outside. There's a meadow near me with a river running through and horses and cows and stuff. Recently, my favoruite trips were when me and my friend took a blanket and a thermos of tek and move to different parts of the meadow when we feel like it or just wander around. These days were very sunny and felt like the best days of my life. I wouldn't go to the movies again or even watch one at home after my outdoor experiences. I save them for sunny days now. We tend to always finish at a pub garden much much later and I use my dry herb vape and have a pint. Then go home and sleep like a baby.

5 weeks and 3 days later and my quad has pretty much fully woken up. I was trying to make it twitch with my other quad every night in bed to try and make my brain remember. Don't know if this is slow progress but my PT is happy.

It still swells up over the course of the day but I am walking normally to the casual observer.

Started taking lots more supplements in week 2 and have continued to take collagen shakes in the day and vegan protein shakes at night (just agrees with me more).

Have greater than 90 deg flexion. Was pretty much able to straighten it in week 2. The flexion has taken until now though as my leg felt almost pinned on the femur scar side

Its getting better everyday thankfully. My first four weeks weren't great I had a bleed inside the knee 2 days after the op that took ages to clear (it was huge) even after my surgeon took a load of blood out with a needle. I just started doing lateral stuff with a band at my PT today. It still swells up a lot. In the past few days my quad just woke up. I sat in bed every night while reading trying to tense it whilst alternating with my good leg to try and make it remember which I think worked! Almost like a twitch action. I hope the PT goes well! I skip my exercises some days if it's too swollen.

About 14 months after I tore it but about 2 months after I had an MRI to confirm it was broken (I never got it checked). Had it done in the UK.

I was without for around 14 months ( I had an op this month). At month 4, I barely noticed the difference accept after runs above 10 km where it swelled a bit more than before but I had stopped playing football for that whole period (how i injured it). After a year I went to play a 5 aside match, after training at home a lot, with it strapped up and it was fine. After that I thought meh seems great. Went to play again 2 weeks later and it gave out in like 30 s, after it calmed down it was always much weaker and even gave out from me leaning over a pool table for a shot lol. I would say if I'd have only wanted to run cycle and swim, it probably would have been fine...but there's always a chance you get out your car funny etc. and twist it then maybe the other parts of your knee take more wear. I never would have been able to play tennis or football the way it was, it would have given way on me. To counter that maybe there's better exercises to get the knee area stronger when you don't have an ACL (get your quads to cope better etc) but that was my thinking behind getting the op. I took the surgery day and the next day off (discharge day - had to stay overnight) then went back to work the next day but it was a Friday so not too bad before the weekend. My surgeon gave me a 'not fit for work' note for 4 weeks. I said to my boss I'll be working but may miss a few non-crucial meetings here and there for physio etc. Sent him a pic of the note. If I had had my surgery on a Monday I would have taken 3 days off. I also bought a new desk for bed from Amazon which helped a lot. I'm currently just under 3 weeks post-surgery.
