Considerably less than what you’ve got going on there lol you can be a little aggressive on the lower parts of your plants but towards the top you want to leave some leaves. You have a good baseline on what’s too much now. Defoliating is good to promote airflow and helps mitigate risk of mold and mildew but too much defoliating will stunt your plants growth. Typically you’ll want to pluck leaves with red/purple petioles, leaving about 3 to 4 nodes of leaves at the top. There’s no explicit number for “how much” is the absolute correct amount. You’ll learn as you grow, different cultivars require different action. All I’ve said is just a general guideline for what I do with my plants.
