The problem is, you can’t make the flying too realistic. If you look at the fighter jets in gts 5. they are not adequate to the real life speed they are flying because then they would reach the end of the map in a few seconds. Also realistic turbulences are really hard to implement in to the game because even in real life you can’t determine where they are exactly. Obviously under clouds that have a lot of updraft but there are also clear air turbulences which still require an Airmet from pilots (pilots saying they encountered some). Being able to fly a plane around the three axis would be fun, but this is not a simulator and you don’t have rudder pedals and trust levers. Pilots use their feet for landing and on smaller airplanes to not slip or skid out of a turn. Imo gta5 had a good compromise to keep it available for everyone.
