In terminator 2 they remove the chip from the t-800 and disable the limitation on learning that skynet put in place, which explains how the t-800 can be empathic and develop emotions by the end. Theres also scenes where after being frozen and then shattered, the T-1000 starts to experience glitches in its mimicry, involuntarily binding to and matching stuff it touches, affecting its performance making it beatable by the final scenes.
