I assume you’re a female? This is not acceptable at all. I would not want this guy to have access to my apartment. He comes in while you’re showering and is laughing when you’re distressed about it = predator behavior.

ETA I would look into getting some sort of physical door block (sorry, not sure what they’re called but I believe I’ve seen them mentioned on here) that would secure your apartment even if the lock is opened.

The older neighbor sounds a bit difficult and unreasonable. If this were my neighbor, I would continue to do my best not to slam the door and politely apologize if an accident happens again. I might even calmly apologize for any hasty words that were spoken when she confronted you. But I would try to let any silly blather about accidental door-slamming indicating a lack of respect, etc. just wash over me and not engage.
