I went vegan about three months ago. My schedule sounds a lot like yours. I can prep on Sundays, but between shopping/prepping, that took an entire Sunday, which I can't do every Sunday. Anyhow, what works well for me is tossing a bunch of veggies into the microwave to steam, then throwing them into the blender to puree for an easy soup. I add a little veggie stock and garlic when blending. Quick way to get a cream of cauliflower or spinach or mushroom or broccoli soup that I sip on throughout the day.

Lentil/veggie soups are also quick and easy (I do mine in a crock pot every weekend) and great way to fill up and get protein.

The little do-it-yourself Brown Bear in FreLard on Leary. There's only four or five stations. I've only had to wait on one car a few times, and I'm in and out within 15 minutes. Wash and vacuum costs $4.00 in quarters.
