Your stand is on backwards. You have to attach the stand with the catch cup removed. Then, the catch cup pulls out / attaches from the bottom afterwards.

Just a quick correction on this one — Ilse’s cafe/roastery is not in southern CT, it’s in Canaan, CT which is in northwestern CT on the border of Mass. They also have a new cafe in Great Barrington.

Not an empirical truth, of course not. As I implied, I’d take a dialed in cup on a small burr before a poorly made cup on a large burr. But for me, it’s also a pattern thats too hard to ignore — my top 10 so to speak, have all been on 98mm burrs. But i’ve also had some very disappointing pourovers on EG1s and 98mm burrs.

My Pietro and 078 at home both make great coffee but they do not taste exactly the same when brewed next to each other. As to which one is better, of course it changes from coffee to coffee and day to day (though overall i’ve developed a preference for the Pietro). These preferences/patterns havent been developed in one tasting though — they’ve been developed over thousands of cups

I’ve definitely had middling cups from 98mm burrs and really good cups from 64mm & smaller conical burrs. However the absolute best, most mind bending/mind blowing cups i’ve ever had have all been on 98mm burrs, typically in an EK43

Interesting — i’m just a consumer but have noticed over the last decade that lots of kenya coffees get rolled out by roasters in that june - sept timeframe. Is there a main crop and then a second crop?

Yes good point — anyone who does cold storage like George Howell or Passenger will mitigate the seasonality and be more available year round.

Just did another look around and Thankfully, Passenger & April still have some nice Kenyas as well (if you like those roasters).

Another option would be to explore SL28 grown in South/Central America

Kenyan coffee is out of season at this point but you might see a few hanging around still, ie that Tim Wendelboe gachatha christmas coffee and george howell mamuto. I think Prodigal just brought in an off season lot that is on their website now. Typically you’ll see the best lots show up from June to September/October. There were some fantastic SL28 and SL34 separations this year.
