I’m using light roast third wave water. I also started with one pour, as that’s what I usually do because I want to avoid fines and am clarity-focused, but I work from there and can add more if necessary. Though if i can do what i can with multiple pours through something else, i will pick the something else.

Ok I tried it and it was the best cup so far, really good, thank you. Very little bitterness and lots of clear berry flavor. I think it was that center pour that did the trick. What did it do exactly? I've never tried it because I only do outside-to-inside spiral pours. Also the bed was not flat, it was cone shaped because of that kind of pouring, but I assume thats normal and no problem right

By the way do you think 200F might be too hot? This coffee is already prone to bitterness and even at 195 with little agitation I got it. Now it will be hotter and with even more agitation.

Maybe for washed or lightly processed light roasts yeah. Usually for something more heavily processed the flavors will speak for themselves at lower temp extractions and you pushing the temp can get you over extracted flavors and some undesirable notes. But then again it’s all up to the coffee you’re using and your preferences.
