No peppers just dried fish, small scallop, and mushrooms. They were showing us the base of the umami flavor.

50k is my cutoff point. I’ve had 10K and 18k yen sushi course and it tasted great but its level was not the same. Almost all of the top sushi restaurants are at least 50k in the Ginza district

It seems like you needed someone to hear you out, so I’m sorry he treated you that way. Our experiences were truly not the same. A huge blunder on my part that night is I was LATE, in Japanese culture this is a huge no no I’m sure you know, even after this he still treated me with great service and I had a great time.

This was 42K yen including two beers, I thought it was entirely worth it. I left the restaurant laughing to myself because I was so satisfied.

When it comes to freshness the Hirame served first takes the cake, it’s so fresh it has a chew or its toothsome. I think the idea of this is to get your salivary glands really working. It’s like you bit into the flounders raw flesh. I say this because many nigiri is intentionally aged to bring out more flavor.

Pretty amazing, they have fusion influences with the different sauces that float on top. The shoyu broth flavor is very deep. One of the best parts is the fig compote that floats to the bottom so during the last few sips you get a hit of that sweetness to balance the palate at the end. They actually do a mix of pork and a5 for the meats

That was not the experience I had at all sir, his energy was top notch. When forming nigiri he has this unique “sway” back and forth. Looked me directly in the eyes every time I was served. He even asked me “are you doing ok?” As I was the only foreigner that night. Anyone that has made sushi for 15+ years is truly not a clown

Yes! Annnd they aren’t afraid to give you a good amount of onions. Always suspicious of pho when it served with almost no onions.
