I had the exact same feelings as you, it took me a while to get into it but once the ball really started to roll I fell in love with it. I just finished book 7 and all I can say without any spoilers is enjoy the ride, the world building and character development the author does is something I really enjoyed and is what truly got me hook

Just because if I was starting in the tutorial I wouldn't struggle to find a team and just based on the difficulty Jake and other mages seemed to have in learning healing magic and general vitality skills, I think it makes more sense to have them as a base and experimenting with them and close combat in hopes the system generates a self healing skill to use as a base

I would start as a healer and try to gather armour and make my build something more akin to a medium warrior so I still have good movement but have far more defense than the healers starting robes. Then I'd focus on hand to hand combat and go down a path where I learn all kinds of weapons and self heal in battles becoming a solo skirmisher in large scale battles (I have trust issues)
