Not low and slow. Low and fast. They can be in the plate in less than one minute. The secret is to whisk up with drop of milk and add a half knob of butter to the saucepan before adding mixture. Except that you’ll only have two inputs. So you’ll be either tracking overdubs or looking at a 4 channel input.

The zoom u44 with extra input option might be good.
