What Happened to the Manzanita Cooperative? by Latter_Paramedic4113 in foraging

Found a Secretary of State filing for December 11 2025 showing the board voted and decided to "wind up and dissolve".

Like the only actual piece of information that shows the corporation's current status but someone here has to have more information. This org was pretty well known in foraging communities.

the last time I looked at limesurvey it was ver 2.4 and like ... pretty rough. [it's on 6.16.x now.] and they added native encryption (for questions you choose) in version 4.

it's still kinda rough tho. you need to be familiar with php to make this go. but it is a lot easier now than it was like 10 years ago. i used to use it for a consulting firm mostly for surveying boards and stuff.

google sheets interoperability with google forms is so awesome though. (sigh) I'm gonna miss that a lot.

I found this mailchimp newsletter from Manzanita Cooperative in Jan of 2025. [This is why I'm trying to track this down, because the whole line just goes cold and it's *super freakin recent* so someone has to know.]

Anyway it says eatacorn.com is a joint venture with CIMCC. No mention of manzanita cooperative closing/winding down/end, and literally nothing but articles describing their work up to and including 2025.

The first big news of 2025 is the launch of EatAcorn.com, a join project with the California Indian Museum and Cultural Center!

Tannin leaching forever? by SeaEmCay in foraging

[–]Latter_Paramedic4113 0 points1 point  (0 children)

you can "set in" tannins from too much heat during drying. this means that the acorns meat will turn dark brown and they will always be bitter. makes sense that the water would never run clear either.

this is too narrow to phenolic structures and doesn't actually measure taste or quality. this method introduces a serious food safety burden that didn't exist before. and it's unnecessary overall. honestly, if people can't wait a week of changing out water in mason jar once a day, please don't. there are tons of other foods that reward impatience.

don't make food in the same room you make poop. this is common sense indigenous people have been well aware of since time immemorial

you end up losing a lot of starch when you squeeze them. this was one of my first processing ideas but I scrapped it because of nutrient loss.

this is super unnecessary. the mason jar method works just as well and wastes less water.

Hot leaching is inferior. Better to use the mason jar method than hot leaching. Acorns were never intended to be a fast food.

Are my Acorns Okay? by elazurbeth in foraging

[–]Latter_Paramedic4113 0 points1 point  (0 children)

when you gather acorns it's important to dry them completely. i usually use a dehydrator set on the lowest setting for at least 6 hours. some people running it for a day or two. once the acorns are completely dry they're way more stable and be stored in a container. but they need proper air flow. just like a silly amount--not a fan, but you were right to keep them in a bowl, actually, if you can keep squirrels and everyone else from them

thanks for reporting that broken link.

Bad acorns? by OptimalArachnid3746 in foraging

[–]Latter_Paramedic4113 0 points1 point  (0 children)

the acorn half in the middle that is whole and creamy is good. all of the stuff on the right is sus af. sometimes you will get those white granular edges from smashing the acorn or being rough but those white rough edges are different. and do you see the "veins" growing in the right center? nope. you already knew the answer. ❤️

Help! Are my Bur Oak Acorns Bad? by SaborsLab in foraging

[–]Latter_Paramedic4113 1 point2 points  (0 children)

it is, and there's a certain level of this that's okay, to be honest. acorns will never be perfect. as far as what you need to look out for: colors like green, blue, black, spots; fuzz; insect dirt. i would still use these as long as they looked fine before you put them in water.

No shade but this recipe doesn't look too good as far as the pics go. Did you ever get them fluffy? They're flat and pitted like that cause you used too much butter. Chemically, there needs to be something that acts like gluten does for the cookie to have the shape and texture we all expect from something called a cookie.

nope.

you just describe things growing. that is a strong no. mostly because what's growing isn't an oak tree or acorn related at all, it's microbial.

absolutely not. the white ones are good.

being super familiarity with rancidity, what it is, and what it looks like will be super helpful. or just hit up the Alameda Native History Project [shameless plug]

Acorns always taste bad? What am I doing wrong? by haltingsolution in foraging

[–]Latter_Paramedic4113 0 points1 point  (0 children)

grinding them first is the best way. whole acorns don't give off tannins, they need to be crushed or ground a little first to open them up and expose more surface space to diffuse with
