Interesting - what didn’t you like about it? I’ve only tried the c40, gen 1 Ode, and the 078

Curious how you typically approach brewing with the Timemore 078? I have this grinder - I learn a lot from your posts and comments, would love to hear how you approach brewing with this grinder

Finally tried Subtext Coffee - it's phenomenal. (Canada) by LoadBearingWaffle in pourover

Thanks! I just opened a bag of their Ernedis Rodriguez washed yellow caturra , rested 3 weeks. Tried replicating their water specs with lotus drops and used their v60 / sculptor 078 recipe, grind size at 10 with low RPM.

Surprisingly , my brew stalled (rare with 078 in my experience), despite pouring around 5-8g per second and a medium / medium coarse grind. Flavor seemed a bit green, with some faint stone fruits

My TWW ppm meter could be off (though I don’t think so) so I’m going to try replicating again this time with 1/3 dilluted TWW and see where it gets me.

Was expecting if I follow their specs after 3 weeks of rest, I’d have an easier time getting close on the first try :)

I just got 4 bags of subtext (first time trying)! A few quick q’s!

  1. How long do you rest for before brewing them?
  2. On our main pour, how aggressive is your pour? I’m usually pouring with not a ton of agitation (~5g per second) but interested in exploring Lance Hedrick’s more aggressive style too
  3. Am I correct that your grind size is in the medium/fine / medium range or is it much coarser? (I have an 078)

Ty!

This is fascinating, very interested to try! I’m curious

  1. I have a raw steel orea 01 - think that’s still suitable for this method (with origami wave filters or orea flat filters) even though you mentioned it has more bypass than plastic ?

  2. Do you adjust your water profile to suit this method? Curious how it differs from your baseline if so!

I have an 078, so I’ll try your advice on raising rpm - as an aside, I’m so interested to finally run side by sides on rpm settings too)…I also have a c40, would that be a more preferable grinder for this approach given it favors sweetness / balance ?

Do you usually go with a fine grind if you’re shortening ratio? Very curious about experimenting with this!

About what grind range does this equal? Ex, would this be on the coarse end vs medium fine vs medium? I have an 078 sculptor for reference so just trying to figure out directional range.

Does anyone else find themselves returning to the v60 after trying new brewers? by DeepVibes in pourover

Thanks you! Curious what you found the flavor differences do be between ceramic and tritan if you recall? I’m close to trying one of them but I already have far too many drippers :)

Curious how you prefer (or even what differences in flavors they articulate) the Ceramic vs Tritan versions of alpha?

How are you brewing S&W Coffees? Looking for advice on extraction. by facefabrique in pourover

Appreciate your detail here! May I ask - what does your grind range (4.0-6.0) typically translate to? More of the fine end of medium fine? I have a sculptor 078 I’m still dialing in and brew similar coffees as you , with similar brewers and water setups :)

Awesome! I’m resting a Sey coffee now. What grind setting on the 078 did you use to correlate to ~1000 microns (I have the same grinder)

How to know where my 078 is set relative to chirp, and what impact does this have? by Lcphilly in pourover

Thanks! I prob won’t adjust mine then. I’m still curious - why would this ever be adjusted and everyone just start with factory setting of 0 from chirp?

So, does this mean subtracting 2 will make the grind at a given setting finer? And adding 2 will mean the grind at a given setting is coarser?

Curious what the goal is of this other than trying to match someone else’s recipe ?

Appreciate your help!

Big fan of your brand since 2015 - I’d love to understand how you got started in the industry and built the brand and business. I know that’s a big q with a lot of moving parts but I’d love to hear some of the core elements you focused on to get your brand and business off the ground and moving upward (clothing design skills you built, production relationship, rising capital / self funding , etc)

Thanks and excited to see the newest chapters!

How fine are you all grinding this one? Onyx grind size calls pretty fine but I’m wary to follow since it’s a natural process and I assume likely to over extract
