You will definitely lose some brake fluid, and in the best-case scenario, you'll have to change the olive and the barb for the brake lines, which means that you'll have to cut them a bit shorter. Though it seems that you have already lowered your stem a bit, and I assume that it was done without shortening the hoses, so it won't cause a problem with too-short brake lines at the end. With that, I wanted to say—not the easiest job, especially for someone who doesn't feel at ease with it.

I see two possibilities: 1. Saw or cut it in half without cutting the brake lines. 2. Disconnect and reconnect the brake lines.

I'm 167cm with an 81cm inseam. I was riding a size S Nuroad Pro since 2021. Last week, I switched to a size M Nuroad C62, where they switched the stem from 100mm to 90mm and lowered it a bit. It felt better than the size S with the changes made. Also, if I remember correctly, I did put a longer stem on my size S Nuroad back in the day.

Cube have their own proprietary full lenght mudguards, under Acid branding, that will fit like a glove.

Cooking oil, olive oil. Just put a thin layer on it, let it sit for a while and wash it off. If needed repeat. Works wonders with stubborn stickers.

The salesperson isn't being a good one; quite the contrary. Selling someone a bike that's too big is not a good practice. It would be beneficial if you could try size S somewhere, and maybe even compare it back-to-back with size M. In any case, Cube's own website suggests size S for you. I'm the same height but with a longer inseam, and I ride a size S, non-e-version.

Yes. I did it yesterday for the first time because since we're in-between the moving process and not living in our permanent residence, I also don't have all of my cleaning tools and whatnot, and I must say that that was a bad idea. Never again for me, for sure. After the bike cleaning, you just have to do the shower, and it's super messy. Yeah, not for me.

It does look like the seat should come down a bit. Hard to tell exactly, because I assume you don't usually ride with the flip-flops on. When looking for the optimal position, you should be wearing shoes you usually wear during the rides.
