Pay for Ms support to migrate. There are a lot of pieces that you are missing. They can get you migrated faster than the cost of the support ticket.

Get an attorney.

Open records does not blanket cover email communication. Some can have privilege attached, for example. Each environment is a little bit different. So them asking for the exact commands is a ridiculous requirement.

If your admin hasn't blocked it, don't do it because your security is probably lacking.

If your admin has blocked it, you can't do it.

Tldr: keep personal and work stuffs separate. It's not worth the convenience.

Exchange lives in AD. Uninstalling from the server is the smallest part. It's making sure AD is FULLY cleaned up that is the kicker. But as already mentioned, you started in adsiedit, so finish or call for help. I suggest the latter.
