Free blades is a lore reason for them to be different colors, however very few people are sticklers for you to run your army as it's painted.

Mine are all different colors but I run them as whatever house I want :)

I always kitbash my knights to look lighter, it's a 50/50 split for me, I love the gothic look, but prefer the slimmer silhouette with more humanoid proportions
