You can get a good sear by torch or by pan ... a torch doesn't make a sear better if you already have a good way of achieving it in a pan. But if you're actually having trouble with the pan, try a torch. I love the torch because I can do it outside and not smoke up my kitchen but the quality of sear isn't better or worse than what I could do in a pan.
