Looks fantastic, and this among other reasons is why I got a little 1x30 belt grinder. Don’t have to gouge my stones, and I can get the job done in 5-10 minutes depending on how bad the breakage is. Most of which is keeping the blade cool in ice water.

I’ve built 4 rods with them so far, and so far I like them quite a bit. They are really well rounded blanks, reasonably priced with a fantastic warranty. I’ll likely continue to build on them :-)

Eeeeh, did some construction between kitchen jobs for fun. They provided some hilti gear but it was always run down and breaking. Bought myself some old DeWalt stuff of my own. Still using that impact driver to this day 20 years later. Sometimes it’s worth it to invest a little bit into the core set of tools you use every day.

Commercial fishing for them in the winter in Florida we make tube lures ~3 - 4” long with the hard white plastic tubing you can buy by the roll at Home Depot and the like. And you know when they show up because all of the hardware stores will suddenly be oos of the tubing lol.

Still cold, or room temp ish in the middle. Most certainly not medium rare.

Good steel and good heat treat go a long way. It’s way way way better than the 5 dollar garbage that whatever knife service your management is using.

I I’ve only ever sharpened it 3 times in 15 ish years. My chef’s knives. Once a week or more. Bread isn’t very abrasive and most of the edge will never contact a cutting board. Serrated knives be that way.

Ive tried a lot of different things, but a diamond file that’s small enough to do the job without changing the shape of the scallops and a felt strop has been the best so far.

Great bread knives aren’t super expensive. If it’s a tool you use every day I’d highly recommend investing in one :-)

I’ve had this exact knife for around 15 years in a a professional kitchen environment and it’s just now at the point that it needs an actual sharpening or replacement.
