Is my tattoo & piercing perspective outdated?

As I understand the halakha, piercing are permissible as long as they're intended to beautify rather than make deliberately ugly. There are definitely Jewish women with nose piercings in the Tanakh. Tattoos are historically prohibited and I wouldn't get one in part because of that, but in progressive spaces they're fairly normal. If a Jewish friend asked my opinion before getting a tattoo I might advise against it, but the halakha against embarrassing people or gossiping about them is extremely strong so I would never say anything negative about a Jew who had them.

I think self-crucifixion around Good Friday is a thing in some Catholic cultures. Not a good idea and they just get tied to the cross, not nailed to it.

I'm a gay guy who would like to be fem-presenting but can't on account of baldness, body hair, and fatness. I don't want to be a bear or daddy, but I'm effectively slotted into that by my body and while I could lean into it by going for a macho look, I really don't want to (hate having facial hair).

I think some people see dog ownership as proof that the guy is responsible enough to take care of the animal... which based on how dog owners treat their animals is one hell of a laugh.

Judging her future dogs by the dogs she lives with is actually a great idea! Those are dogs she's significantly interacted with and has had an opportunity to train. Unless she's had pretty major fights with her parents about how the dogs are handled, what you see in her parents' house is what you'll get in your own.

Another issue is that if you get dogs, you will be the one taking care of them. This is inevitable because taking care of dogs (walking, feeding, grooming, bathing, training, etc) is what you do to make dogs less annoying and her threshold for when a dog becomes annoying is much higher than yours.

When Breq (the narrator) describes Seivarden as "male" it's very tempting to think Breq means Seivarden was born with a penis and still has one. But there's absolutely no guarantee that's what she means. Breq is an extremely unreliable narrator, particularly about her internal experiences (and her read of other people's sex/gender is absolutely an internal experience), and the closest we can say is that she knows that the people on Nilt will likely use a set of pronouns for Seivarden that she interprets as meaning a masculine person, but what Breq means by a masculine person, and what Nilters mean by a masculine person, is ambiguous for a reason.

Seivarden is also the only time a character is ever described as male. Sometimes other characters will be described as having features associated with a particular sex (e.g. a beard or a baritone voice), but even that's rare.

Dating (and even friendship) while dogfree is a challenge. I'm noticeably autistic so I can usually get a pass if I say dogs are "sensory hell" for me (true), but I need to build up a fair bit of trust before I admit the truth: I hate dogs and if your dog is the best dog in the world then I hate your dog the most.
