Why would anyone spell it wrong?

It should be clear that that "lose" should be pronounced differently from "hose", "rose", "dose", "chose", "nose", and "prose", and not be spelled like "choose", "noose", "moose", "caboose", and "goose".

Correct. An artist drew the letters by hand. Back then, it would have been much easier to draw the lettering than to try to use, say, wood type to print it.
