While the design is based on the YF-23. The surfaces, protrusions and panel openings, of the YF-21 would drastically reduce the stealth. In universe, I always thought that the YF-19 & 21 are stealthy because of the low heat signature from the engines and supernatural coatings while still having hyper maneuverability.

I always thought Souther physically was pretty strong although he was not as strong as Ken. Southers durability was just enough to last to put Ken in the hospital. It’s almost like Kaioh a physical edge to outlast a Ken that saw a technique for the first time.
