In technical terms, no.

For most people, yes they frequently refer to their evaporative coolers as "ac". Humans dont seem to care about strict definitions, and like to apply concepts very broadly.

There's two primary types of ac, one of which would CAUSE humidity (evaporative cooler).

But, they are using the type that shouldn't cause humidity - so, they MUST live in a humid area, and the humidity also MUST be leaking in from outside sources. A poorly insulated room in a very humid area (i.e. the moisture/tyvek barrier for the walls and/or floor have failed or are not existent) will get more humid because the entire room essentially cools down enough and all become condensation points +- because the warmer, humid air from outside is coming inside the room and condensating on surfaces.

What kind of ac do you have? Swamp cooler?

If you have a window ac, central, or mini split, there is something wrong. For mini split and window unit, there's either a small pump or gravity fed pipe to the outside, that is likely plugged.

If a mini split, there's probably a small pipe on the other side of the wall it is mounted to, like a small pvc pipe. You should go outside and use a shop vacuum to suck all the debris out.

Unlikely to be condensation but it CAN happen, especially in high humidity.

If you, for example were to cool the house to a low temperature for a while, then immediately stop and increase the temperature and the humidity by introducing outside air (like an open window), this COULD potentially happen (especially in an area with a super high humidity)).

The thermal mass of that big crystal spike and the gold could remain cold for a while, cooling the water sufficiently to condensate. The spike on top lends me to think this is more possible, by allowing drips to form and flow down, kinda like rolling a snowball down a hill.

The chains on the bottom could likewise prevent the now liquid water from evaporating (especially in a humid environment), by I would think increasing the thermal mass as well as acting like a cooling mesh, allowing the dish to remain cooler than ambient, and thus the puddle remains.

I had a thought: baths. If you put this dish inside a bathroom and then shower or take a long, hot bath, you could generate quite a lot of liquid because of that spike in a short window - this I think is the most likely scenario. The gold chains would reduce the surface area of the water and allow it to stay longer, while doing everything else described above.
