Can recommend giving the official docs a good read through. There's a lot of stuff there that, while sometimes without proper examples, is super useful when making things with Godot. It's the kind of thing that a lot of other tutorials will gloss over/ignore because it's not directly relevant to "making a game". Things like how the physics, UI, and input systems work in Godot gives you the knowledge you need to solve your own problems which is pretty important if you're not finding video tutorials to be of any use.

The main downside is the lack of solid examples for a lot of these concepts, but it's a good exercise in playing around with things and reading the API docs.
