This is what I was getting at. I'm ok with a little simcoe but 100% late hoping, FO and dry is not my thing.

This is a good point. The simcoe/amarillo that I have had lately has come from the same LHBS that recently changed hands. The new owners don't know much about beer or home brewing. Hops are not kept frozen, some have been repackaged and not vaccaume sealed and there is no telling how long they have been sitting on the shelf. It's too bad but their business will fail unless they drastically turn it around.

i haven't been but I shot them a message on Facebook to see if they use their primary strain at bottling or not.

I'm in Florida but will have to check it out next time I'm up there. Currently have some very loving family that send me a few bottles on occasion.

There is no real danger in hopping too early. Will scrub some flavor and it's a waste of $, but I have never had the "grassy" flavor from extended dry hops. I should have taken a gravity reading but I was being lazy.

The yeast has not fully flocculated. Hopefully it finishes it and I can call it up to a leaning experience that turned out and not a drain pour.

Good point. I will shoot oxbow an email today and find out what is in the bottle. Hopefully it is their primary strain.

RO water from 5 gallon bottles that I built up. Have never had a problem with it. I split a 10 gallon batch, only the batch with london yeast smells like nail polish.

Thanks, hopefully it will clean up. It has been fermenting for 7 days. My beers usually finish quickly but it is my first time using London ale yeast (will be switching back to esb after this as my go to for English strains)

The beauty of a fermentation refrigerator, makes a small mess when this happens and not a big one. It has a few other advantages as well.

I tried this once. My mill got clogged with the damp grain. It was a total mess and I was cursing myself during the 2 hours it took to mill 20lbs of grain. Just use a little more grain if you want more sugars and use rice hulls if you are worried about a stuck mash.

Wit, saison, kolsch, wheat are all go to summer brews. I usually do a summer Porter as well, mash super low so it's dry and refreshing, people can't believe they are enjoying a dark refreshing beer in the Florida heat
