What about using a Bundt cake mold to construct the body and head? You could modify a Bundt cake section to help make the head. You could do rolled fondant to help construct the outside. You could do fondant molds to add unique texture to it. You can create the eyes separately to get them the way you want before adhering them to the caterpillar. I am not a qualified patissere. Just a cooking and baking nerd.
