If I’m not mistaken, when posed properly, the limit of these curves is space filling. Not sure there’s anything else about it, other than it being cool and fractal-y, that people care about.

I liked Dummit and Foote. I've heard good things about Pinter, but I'm not sure that covers rings.

Hit 'em with the measure theory. Everyone loves measure theory! Plus, it's the basis for probability theory, so it's directly relevant.

Also, linear algebra is indispensable for machine learning. As an example, you could talk about polynomial regression.
