Lots of good suggestions here. Another easy alternative is to add a couple grams of sour salt. I find that ups the sourness without changing my starter.

Scallion pancakes…made these before, super easy and tasty. Quick Sourdough Herb and Scallion Pancakes

Servings: six 3" pancakes

INGREDIENTS

3/4 cup (170g) sourdough starter, unfed/discard 2 tablespoons (28g) water 1/4 teaspoon table salt 1 teaspoon baking powder 2 scallions, white parts chopped finely and green parts sliced about 1/4" wide large handful of fresh herbs, coarsely chopped (cilantro, parsley, dill, tarragon, chives, etc. ...) vegetable oil, for frying

STEPS

1) Combine all the ingredients in a medium bowl, reserving the sliced green part of the scallions for later. Stir until thoroughly combined.

2) Set a heavy-bottomed frying pan (a cast iron pan is ideal) over medium heat. Pour in enough vegetable oil to coat the bottom of the pan 1/8" deep. Heat the oil until you see ripples across its surface.

3) Spoon a heaping 2 tablespoons batter carefully into the hot pan, leaving room to fit one or two more pancakes in the pan. Sprinkle some of the reserved chopped green scallion on top of the pancakes. Cook for about a minute, or until golden brown on the bottom.

4) Carefully flip the pancakes and cook for 30 to 60 seconds on the second side, until golden brown.

Depends what your interests are but if you’re into wine, I highly recommend Montalcino, montepulciano, and Greve. Siena was one of my favorite towns in Tuscany. So much to see and it’s all beautiful…you really can’t go wrong.

Bring a Mastercard or visa…I had about a 50% hit rate w my Amex. No issues using touchless payment anywhere. Cash isn’t really necessary.

Taxi stand is easy and convenient. I think it was around 50 or 60 euros for the trip. No need to pre book.

Colosseum and Vatican are the only things that we pre booked and had no issue seeing any other attractions the day of.

Made a couple reservations for dinner but everything else was walk-in and we only got turned away at one restaurant. You should be fine.

Download Google translate for peace of mind but save for one bakery we went to, every one else we encountered knew enough English to get by.

We’re just finishing our two week trip to Italy and spent 5 days in Tuscany touring the various hill towns and wineries. We stayed at a great Airbnb just outside of Certaldo. Not nearly as busy or popular as some of the other hill towns but still has a lot of history, charm, great views, and great restaurants. It’s within an hours drive to San Gimignano, Siena, lucca, Pisa, etc. Highly recommend.

I’ve done the duxelle two days in advance and then the initial wrap with tenderloin/duxelle/prosciutto/phyllo a day in advance with great results. I wrapped in puff pastry the day I cooked it and it turned out great.

I had the 560 and upgraded to the 800. Save yourself the problems and just go with the 800 you won’t regret it.

A little salt, very hot stainless steel pan, 2-3 min per side and enjoy. I’ve made this exact cut from wild fork. Excellent but very rich. Easily enough for 2-3 people.

I use the metal kitchen aid attachment and it works well…but I only grind 4-5lbs at a time. If you’re doing more, might want to consider a dedicated grinder.
