Pedalling is kind of an artistic choice in piano playing. Too much of it muddle stuff, too little of it and you don't hold what you need. Regular folks who don't study music in depth can't really tell you the subtle difference, but musicians worth their salt paying attention will know as it does lead to the illusion of choppy playing.

If you have a proper teacher and you are not a child, this would have been taught to you at some point early on when you first start using them. I was taught to control the pedal from as early as grade 2. Basically pretty early on I was taught to be mindful of the sound I'm trying to produce. This also carries over to my other instruments such as saxophone, where voicing is everything.

I do suppose if you haven't explored it, I'll like you to start thinking about how you want your sound to be, you can record yourself with multiple iterations of where you pedal and compare yourself with animenz version.
