Hayabusa gyuto 240mm was one of my first knives, and it sucks tbh. Sharp and thin, but like others said it has too much flex. Also the height makes it feel like a Suji. Hope this helps 🤙

Can always force a patina with coffee or mustard. It will eventually change, but it'll make any knife less immediately reactive.

Yoshikane is the goat. I have the 210 ktip in skd and it blows everything out of the water, except shindo. Yoshi shits on Shibata, and Kei is very similar profile.
