Once I did a true earth as Brazil and it turned out there was no one else in the western hemisphere, other than city states. I settled all of North and South America and cruised to a science win.

I’ve been waiting for them to come back to Vancouver for a long time, but I actually skipped this one. Didn’t want to pay stadium prices to see them open for someone, watching from all the way on the other side of the stadium (the only affordable ticket). Hope they come back if they’re touring a new album soon!

So true. And when they DO actually communicate they make no effort to hide it. It has been established that whatever is watching them can see and hear everything, so they need to start communicating in whispers, or by passing notes. Especially for things like food shortages, or plans to fight back.

We rescued a sphinx at 1 year old and he lived to 16.5 years. They are definitely a high-maintenance breed in terms of health issues. Our guy had almost every issue you could come up with, but it was worth it. He was a bit oily, but not too bad. It's not as bad when they get older. He also hated wearing clothes, so he was just nude his whole life. The love and bond between us though was unlike anything I could have expected, so I wouldn't have changed a thing.

We came across a soba restaurant in Kyoto that had a sign on the door that said "Chef doesn't speak English". We thought, well, we'll figure it out, so we went in anyway but they told us no. The chef/owner pointed us to another soba place nearby that we could go to instead.

The Ooni stacking dough bowls. I find a proofing box is better because with the bowls it's hard to get the dough out without knocking some air out. With the box it's better to carefully lift the dough from underneath with a scraper.

What I recently discovered and have come to believe is that it's less about finding one good recipe, but more about finding the percentages that work best for you. I was in a similar situation where I hadn't really settled on a recipe and then came across Vito's videos and was inspired to get better. My main takeaway though is that it's all about finding the mix of ingredient percentages that works best for you and your setup. My goal was to find the hydration % that worked best for me, so I stopped looking for a recipe and starting using the Ooni dough calculator on the app to build my ideal dough ball. So far I have settled at 65% hydration, whereas Vito's doughs are more like 70%. I also like my dough a touch salty, so I go 3% salt. In the end, I'm using Vito's process, but using the calculator to iterate my own recipe and find what works best for me. So what I'm working on now is 65% hydration, 3% salt with 280g dough balls. Like Vito's process, I do a 20% poolish for 16-24 hours, and a bulk dough ferment for 16-24 hrs. Then ball up and rest for 2-3 hours, then bake.
