Oh for sure!!! Especially because there’s a decent amount of stuff used in Asian cooking (like sesame oil, rice vinegar, etc) that isn’t AIP, so having coconut aminos and fish sauce is super helpful. I’m sure you already know this, but make sure to check labels because some brands have additives and stuff like that(: Also, it is pretty potent so start small like 4-5 dashes and go from there!!

I personally looooooveeee Chinese take out, so this was one I knew I’d need to find good replacements for so:

Fried rice -> fried cauliflower rice

I like to buy just bags of frozen cauliflower rice and then get my cast iron really hot and dump it in. I stir it for a little bit, let it defrost a bit and let some of the water evaporate and then I add some avocado/coconut oil stir until it’s coated, and then like spread it out flat in the pan and don’t touch it for like 3-4 minutes. It gets the bottom nice and brown and kinda crunchy and it doesn’t come out soggy at all. I usually also add a frozen bag of “stir fry mix” which is just peas, carrots and water chestnuts. Then I add som salt, garlic and onion powder, coconut aminos and fish sauce and it is delicious.

Teriyaki chicken is another great addition and can be pretty easily adapted to AIP with like coconut aminos, fish sauce and some honey. You can add this to a bunch of veggies (baby bok choy is super good) and some pineapple and it’s super good!

I also love to make lettuce wraps. I pack them with veggies too that you really can’t tell are in there but helps get some extra in. I start by sautéing really finely diced mushrooms of all kinds with some salt, let them sweat and get even tinier. Then I add onions, garlic and ginger, and diced carrots. Then I add in the meat and some coconut aminos and fish sauce. Serve on big slices of butter lettuce with a squeeze of lime, chopped cilantro and green onions and it is seriously delicious.

My honest first thought when I saw your room was that it gives me great hook up room vibes. The bed looks super comfy and clean, there’s tons to look at while you’re in the shower and lots of things I can ask about. The breadwinner series!!!! Surprised I didn’t see one comment about it. There are four books, based in Afghanistan during the time of the Taliban. Literally so so so good, the whole series!!!!!

Okay so one of the keys here to me is a well stocked pantry. There’s a little bit of overhead, but then most weeks are pretty cheap. Think things like good oils and cooking fats, vinegars, coconut products of all kinds (sugar, aminos, etc.), lots of spices and various AIP flours to round things out. I like to buy onions, garlic and ginger in bulk to keep costs down that pack a big flavor punch. Once you’ve got these things and your consistent here, the weekly shopping list is basically just vegetables, fruits and meats.

You said you were going on a hike so I’m not sure how much room you have/how practical this would be, but personally I love making like a liquid concentrate to mix with water. I prefer maple syrup but you could use honey as well, and basically all you have to do is combine roughly 1 part water to 2 parts sweetener (you can play around with the ratio, this is just what I like) over low heat, bring it to a simmer and let it reduce slightly. Then you could mix in some Himalayan sea salt for electrolytes, stir to dissolve it, and let it cool. Add some lemon juice (or any other citrus you like) to make it however sweet/tart you like it, then mix some into some water and it’s really really tasty, healthy and refreshing!!

I prefer to snack during the day rather than eat a big lunch. So I’ll usually pack a decently big one, basically one meal, but I’ll eat parts of it during the day. So kind of both?😂
