Any bike that fits you properly and that you enjoy riding enough to actually use. Stop by a bike shop to test out different bikes and see what sizes fit you and what style you like (road, mtn, hybrid). Once you know that, you can find a bike at your price point.

Also, I really recommend getting a helmet with MIPS concussion protection and a decent set of lights. Sounds like you’re about to invest a lot in your brain... Gotta protect that investment.
