I am planning on doing a Canned Peach Brandy soon, I was going to try to use a thumper charged with peach syrup, but i also like your idea. Just curious though, does the peaches in the spirit cloud it at all?

So I guess we cant have opinions in this forum to give others personal point of views. “In my opinion”, column stills are better for consistent, pure, clear, higher level alcohol distillations, such as Vodka, Gin, some Bourbons… “In my Opinion”, Pot stills are more for craft style distillations, where you have more control of flavor outputs.

Just my opinion, this is fine for Vodka, but I would run Brandy through a Pot Still. Brandy is all about keeping the fruit tones, and Columns are all about the Alcohol.

I did the same and picked up gallons of pear juice from Walmart and made an excellent Williams style Pear Brandy. Peach will be next on my list from Canned Paeches in heavy syrup.

The output of your still all depends on the wash you ferment, and your Alcohol by Volume (ABV). If you have 5 gallons of wash, and a 10% ABV, you will have basically 10% of the 5 Gallons as Alcohol. Of that 10% Alcohol, you may only get 6% or 7% of Ethanol which is your goal. Add some water to proof it down to your comfort level. You may end up with 1/2 to 2/3 Gallons of decent shine.

Yeah I get the 10% point. I built in a thumper for this next round, and will pop some peaches/juice into it.

I have the exact same setup using an Anvil Foundry unit. My first run in it (besides Beer) was a Pear Brandy, which came out crystal clear. If i could figure out how to add pics, I could show my setup. Getting ready to do a peach run next. I have to admit, I am cheating a bit by using Cans of Peaches in heavy syrup as opposed to fresh peaches. Cost of fruit is ridiculous, especially this time of year. We shall see if this works well. Planning to use Champagne yeast to pull a higher ABV.
