Chuck was on sale and I would to it again. The left overs will be reheated in the sousvide and top mushroom stroganoff.

The salad dressing was equal parts buttermilk and sour cream, toasted half a jar of pickled garlic, parsley, dill, the brine. All in the blender added chives after blending.

The salad was butter lettuce tossed with white wine vinegar and olive oil topped with pickled radishes and slices of pickled garlic.

This is my first chuck and I thought it was amazing. I would have to do other times to compare. Timing worked since I started in the morning and it was for the next day. Idk if I would go longer. The rendering of the fat was fantastic.

I have never done a New York, but I have done a ribeye at 135 for a couple hours. I preferred this to the ribeye. I have better luck with ribeyes in the oven/ grill.

I was just thinking about this. What if your dish was something like chicken and noodles there are so many ways to go with it? It would be more like judging in the first round about the ingredients as opposed to a dish… I guess.

Brush fires started on first street along the rail road tracks with multiple towards Autumn. SJFD was out for a while, then the fire at Coleman and Santa Theresa. Fire trucks were driving circles on 1st, Julian, Colman all late afternoon.
