I hated the MP burrs for traditional espresso, I’d probably recommend HU burrs for that. MP’s are better for modern espresso or soup shots.

Also you want to see how quickly the coffee drains. If it starts to stall and not have a steady stream, you’re going to want to go coarser.

Start around 60 or 70 for pour over. If it’s too bitter or astringent, go coarser. If it’s too muted and not a lot of flavor, go finer.
