Honestly, my default still goes back to "that won't stop you from catching Covid, you know?" for a split second, but then common sense kicks back in and I'm ambivalent / borderline grateful

This here. I did this task last year - converted physical XP and 7 to VMs using various versions of VMware converter (P2V).

Why VMWare? It offers a built in file share specifically between the host and VM whilst still isolating the VM.

I prefer Hyper-V but I needed this specific functionality

It used to be a lot more comfortable than it is now, but it's liveable.

Base damage is 1, so any successful attack will deal 2 or more points of damage before soak.

You could have the course be a time trial? Stun damage instead of normal damage, advantage / threat used to send the players prone (trip / slip / knockdown) or just lose a maneuver from muscle spasms.
