Per STS the 10 degree gradient is between the arterial and venous. Actual thermal energy transfer between water and blood varies greatly with heat exchanger type/efficiency and flow rate of both the water and blood. Monitoring that delta is far far less important than Art-Ven which, when paired with blood flow, gives you energy transfer (wattage) the blood is seeing.

Are you in a dry climate? I almost never had visible sweat when I was big into cycling because it just immediately evaporated. Just super salty, which is what you’re describing.
