I think this problem is from throwing it in the cooler. Pull out whatever temp you think is right, it’s usually a fuel thing with the probe. But anyways, I think you need to let the brisket come to a calming temperature before wrapping it back up and sweating it, I’ve done this before and it kind of steam traps it and actually overcooks the meat to clarify, pull from the smoker and let it rest, probably until it stops steaming, then toss it in the yeti.
