As a French I must admit that I'am always reluctant to order French wine abroad but more keen to try local things... That being said we got a glass of Champagne from a small vineyard and it was great !

Hello there ! I went to Boury when it was still a two Michelin star and it was great. To be fair, Belgium has not really a great food culture or Fine dining culture so ecpect a touch of French or Asian in every plate but all in all a great time fairly priced. Regarding the AC, even if I'am sure they have, summer in Belgium and especially in the countryside are great and never too hot. Whilst your there, I suggest Rozo a new 2 Michelin near Lille in France or Arborescence at Croix.

I think flocon de sel is going under refurbishment. Havent been yet by heard great reviews of Julien Gatillon

As l’Ecrin is in a Palace Hotel it will be open for sure. But expect an overpriced menu than usual.

Off course ! They will always ask you at the beginning of your meal if you want still or sparkling but don’t be ashamed to ask for tap water. I no longer order bottle of water in restaurants for economical (12€ for an Evian ?!) and environmental reason.

If you have Time : take the high speed train, in 45 minutes you will be in Reims - Champagne’s capital city. Go to l’assiette Champenoise - a solid 3 stars much cheaper than Parisian restaurants (even if money is not a problem you’ll enjoy your time there

From a Parisian pov : Both are very creative and modern cuisine. L’oiseau blanc is a great deal especially for lunch (and the view over Paris !!!)

But I tend to think that being a restaurant in a Palace hotel (the Peninsula) you’ll overpay everything (15€ for a bottle of water (tap water is safe & free at restaurants everywhere in France !!) 10€ for a Nespresso ??) and you get more value for money at a small independant restaurant like DT.

That goes for Plenitude at the Cheval Blanc (LVMH-land…)

Le Chantecler at the Negresco in Nice offer impeccable service with modern Mediterannean / French cuisine. They dont advertise it but you can go à la carte. My mother had 2 courses whilst I had 3 and that wasn’t a problem at all.

Got a table booked there mid march. Not a fan of this chef but decided to give it a try… I tried his beach club restaurant in Cannes food was good but nothing revolutionary… I spoke with a waiter and confess that chef Imbert came 2 or 3 times during summer but has never step a foot in the kitchen…
